Abstract: The pungent principles (gingerols and shogaols) were extracted after the sliced dried ginger rhizomes (Zingiber officinale Roscoe) had been either solar dried or solar dried/steam distilled using acetone or ethanol separately as the extraction solvent. These pungent principles were monitored using high pressure liquid chromatography. Based on 100 g (dry weight basis) of the ginger rhizomes, the percentages very between 4.8 and 9.3 of the pungent principles extracted, using the laboratory scale extraction apparatus (after 200 h of extraction time). Similar values were obtained using the pilot plant extraction apparatus.
